Introduction to Wang’s Tea
|

Because Da Dao Cheng is close to
Danhsui
River
in
Taipei
and transportation is convenient, in earlier periods it was an important
commercial city in
Taiwan
.
Among the various industries in Da Dao Cheng, tea firms were a very important
link in the economic development of Da Dao Cheng, in early Taiwan economic
history, there was even the saying “south sugar north tea.” As the times
change, the industries have shifted, and tea firms have lost their former
glory. The tea firms and tea factories that stayed in Da Dao Cheng, have slowly
moved or closed, but there are still some tea firms that stand and insist on
the traditional high quality tea passed down for over a hundred years, this is
Wang’s Tea.

Wang’s Tea can be called a hundred year old tea producing family; the Wang
family had already been in the tea production industry when they were still in Anxi
in
Fukien
. In the 19th Century, the
Wang family went to
Southeast Asia
to expand
tea markets, and they opened Wang’s Tea. In the 30s the Wang family came to
Taiwan
to develop, because they saw the
convenient transportation in Da Dao Cheng, so they chose to stay in Da Dao
Cheng, from that day on Wang’s Tea has been an important part of the
Taiwan
tea
history. |

The current owner is the third generation of Wangs; he came to
Taiwan
from
Fukien
with his father to continue their business. Although the tea industry is not as
glorious as before, but Mr. Wang still holds on traditions, insisting on producing
good tea, because of the perseverance of Mr. Wang, people are able to drink tea
that is the same good quality as it was a hundred years ago.

The
production of tea is not just limited to “initial production,” this delicate
tea factory in Da Dao Cheng, specialized in taking rough tea that is not good
for the body, and processing it into delicate tea.
The process of delicate tea was not as simple as I thought, it needs to go
through many complicated procedures, if any process is incorrect or forgotten,
then the aroma and original flavor of the tea will disappear.
All subjects regarding tea are very deep, and cannot be learned easily, it
takes a lot of effort. Actually after today’s schedule, I came to understand
that the world of tea is very profound, if you do not have interest in it, do
not attempt to walk into the world of tea.

On the morning of February 1st, we went to Wang’s Tea; we
asked many questions such as why did tea flourish in Da Dao Cheng, the
procedures of initial production and delicate processing, all the processes of
making tea, and the different types of ancient tea production methods and tools.
We learned that the only ancient method that is still used is the coal roasting
kiln, using the coal roasting kiln takes a very long period of time, just the
initial coal burning takes around 20 hours, every 3 hours the tea needs to be
turned or transferred to the next kiln. Although the tea can keep its original
light aroma through using this old method, but the time required was really too
long, that day we also learned many things that were not recorded on the
internet, we really gained a lot.

When we arrived at Wang’s Tea in the morning, the owner Mr. Wang took us all to visit a delicate factory. Mr. Wang said that Wang’s Tea is the only existing old tea factory, but there is no tea grown nearby, why was there such an ancient tea factory here? It was because this used to be the old tea center - Da Dao Cheng, and the reason why Wang’s Tea was established.
Entering the tea factory, the walls not only had delicate tea making procedures, we also saw four delicate tea machines, some were used to dry the tea leaves; others were used to cut the tea leaves shorter, thinner, and separate the stems.
Later there was a lady that taught us how to brew good tea, everyone tried the teas, there was special Oolong tea and Dongding Oolong tea, they both tasted good, but sometimes they were slightly bitter.
