In the views of the most people, Mucha string noodle should have come from Fujian and might originate from a Fuzhouese craftsman with the surname of Cai, who moved to Mucha and took in apprentices for production of string noodles in great demand, and Mucha has since become a major production origin of string noodles for Taipei. When Mucha reached the height of prosperity in around 1950s, there were about a dozen or score of string noodle workshops there, whence the title "String noodle Gantry" for it.
Thereafter, with the dynamic urban development of Taipei, land price is soaring and life style changing, which confront the handmade string noodle workshops with many issues of the times and inheritance. The thriving scene of these workshops gradually faded out in the elapse of time, and nowadays there are only three of them surviving in Mucha, where one may recollect the memories associated with the String noodle Gantry.
